Gourmet Breakfast: Campfire Eggs Benedict
Eggs Benedict is a brunch favourite and can’t get much more gourmet when it comes to breakfast delights. Here’s how you can make them over the campfire and wow your friends and family.
Ingredients:
- English muffins
- Eggs
- Canadian bacon or ham slices
- Hollandaise sauce (you can prepare it ahead of time or use a store-bought mix)
- Salt and pepper to taste
- Chopped chives or parsley for garnish (optional)
Equipment
- Campfire
- Skillet or griddle
- Pot for boiling water
- Tongs or spatula
Instructions
To start, you’ll need to build your campfire. Next, prepare the Hollandaise sauce. If you’re making it from scratch, you can prepare the sauce at home and store it in a portable container. If using a mix, follow the package instructions. Toast your English muffins and cook the Canadian bacon/ham until slightly browned. Poach the eggs in simmering water until the whites are set but the yolks are runny. Place the toasted muffin halves on a plate, top with Canadian bacon/ham, and add a poached egg to each.
Drizzle with prepared Hollandaise sauce. Season with salt and pepper. Garnish with chopped chives or parsley if desired. Serve immediately. Keep in mind that cooking times may vary depending on the heat of your campfire, so it’s a good idea to keep an eye on each component as you cook.
Gourmet Lunch or Supper: Campfire Stuffed Bell Peppers
Stuffed bell peppers are a favourite amongst gourmet dishes, but have you ever had them cooked over an open flame? Here’s how you can make them yourself on your next glamping adventure.
Ingredients
- Bell peppers
- Cooked rice
- Black beans (canned and drained)
- Corn kernels (canned or fresh)
- Seasoned ground beef or turkey
- Shredded cheese (optional, for topping)
Equipment
- Campfire
- Grill Grate
- Aluminium Foil
Instructions
Start by preparing a filling mixture of cooked rice, black beans, corn, and seasoned ground beef or turkey. Cut the tops off the bell peppers and remove the seeds and membranes. Stuff each pepper with the rice and meat mixture, packing it tightly. Wrap the stuffed peppers securely in aluminum foil, making sure to seal the edges.
Place the foil-wrapped peppers on a grill grate over the campfire and cook for about 15-20 minutes or until the peppers are tender. Carefully unwrap the foil packets, and if desired, sprinkle some shredded cheese on top of each stuffed pepper. Place the peppers back on the grate for an additional 5 minutes or until the cheese is melted and bubbly.
